Healthy Taco Soup

Warm your family up this weekend with our healthy Taco soup!

1 1/4 lb Ground beef, lean

1/4 cup Cilantro and parsley, fresh leaves

2 cloves Garlic

8 oz Mushrooms

1 Onion, large

1 Orange and/or green pepper, large red

1 bottle Tomato, reduced-sodium juice

1 can Tomatoes

1 Zucchini or yellow squash, large

1 tbsp Lime juice, fresh

1/8 tsp Cayenne pepper

2 tsp Olive oil

1 tbsp Cumin, ground

1 can (15 oz.) pinto, garbanzo or black beans, rinsed and drained


In large soup pan, sauté onions, garlic and olive oil over medium heat for 2-3 minutes. Add in ground beef and brown until no longer pink. Add in Tomato juice, canned tomatoes, mushrooms, pepper, zucchini and beans. Bring to boil, add in Lime juice, cayenne and cumin and serve immediately. Top with cilantro and parsley.
